how can i edit "MediaWiki:Sidebar" in that way, that the headings (the first-level list elements) become Links to my WikiSite?

For example, i tried:

*[[TitleOfMyWikiSite | Title]] ** site1 | something ** site2 | something else

But that doesn't work.

What am I doing wrong?

You can't. That's not supported for the sidebar in Vector nor Monobook skins.
